These meatballs can be categorized based on the meat used, such as beef, chicken, fish and shrimp meatballs. In addition, there are also meatballs filled with eggs, cheese, or other ingredients that add to the deliciousness.   

  • Beef Meatballs: A classic meatball made from ground beef, it has a savory taste and chewy texture.   
  • Chicken Meatballs: Meatballs made from ground chicken, with a lighter flavor and softer texture.   
  • Fish Meatballs: Meatballs made from ground fish meat, have a fresher flavor and a smoother texture.   
  • Shrimp Meatballs: Meatballs made from ground shrimp meat, have a unique flavor and chewier texture.

  • Raw Material Processing: Grind the meat finely and mix it with selected seasonings. Use tapioca or sago flour for a chewy texture.   
  • Dough Processing: Knead the dough until the protein is broken down and the texture becomes solid. Shape the dough into a round according to taste.    
  • Boiling: Boil the processed meatballs in boiling water until they float and are fully cooked.

Guided by Chef Ami, runner-up of MasterChef Indonesia Season 10, the participants have learned how to process one type of meat into various types of meatballs, such as flat meatballs, smooth meatballs, egg meatballs, brat meatballs, and mercon meatballs. This class was held last Wednesday, May 8, 2024 at MODENA Culinaria.
