  • Fish Meatballs: Meatballs made from ground fish meat, have a fresher flavor and a smoother texture.

  • Raw Material Processing: Grind the meat finely and mix it with selected seasonings. Use tapioca or sago flour for a chewy texture.   
  • Dough Processing: Knead the dough until the protein is broken down and the texture becomes solid. Shape the dough into a round according to taste.

This class was held last Wednesday, May 8, 2024 at MODENA Culinaria.
